Spaghetti Alla Carbonara
Another Northern Italian speciality
The perfect Breakfast mediteranean meal. Makes two large servings
Part 1
- Heat large frying pan with 6 table spoons of Olive Oil and a Knob of butter
- Chop and add Onion and Garlic
- Add herbs and seasoning
- Cut up bacon or pama ham and add to the frying pan, You may want to add the pama ham later in the process
- Heat for 2 mins until Onions turn slightly brown
Part 2
- prepare half a medium sized saucepan with slightly salted water ( 1/2 teaspoon ) + a little olive oil
- Bring water to boil and add the Spaghetti, simmer for 10 mins
- Test spaghetti by either tasting or flinging a strand at the kitchen titles - If it sticks to the tiles then it is ready to eat !
- Drain Spaghetti in a conlander and put to one side ready for mixing in the ingredients (the timing is crucial)
Part 3
- Remove from heat (I forgot that bit) Add Spaghetti to the frying pan and crack open a couple eggs and add to mixture
- Stir continually until the eggs are heated but not scrambled (Saturday Kitchen omlette race)
- Add some fresh cream where required
- Add 3 - 4 table spoons of grated parmesan cheese and give one final sir.
- Serve up with grated chedder cheese and add more Parmesan cheese to taste
- Test on cat first and if he likes it then you're in business
