Spaghetti Alla Carbonara


Another Northern Italian speciality

The perfect Breakfast mediteranean meal. Makes two large servings


Part 1

  1. Heat large frying pan with 6 table spoons of Olive Oil and a Knob of butter
  2. Chop and add Onion and Garlic
  3. Add herbs and seasoning
  4. Cut up bacon or pama ham and add to the frying pan, You may want to add the pama ham later in the process
  5. Heat for 2 mins until Onions turn slightly brown

Part 2

  1. prepare half a medium sized saucepan with slightly salted water ( 1/2 teaspoon ) + a little olive oil
  2. Bring water to boil and add the Spaghetti, simmer for 10 mins
  3. Test spaghetti by either tasting or flinging a strand at the kitchen titles - If it sticks to the tiles then it is ready to eat !
  4. Drain Spaghetti in a conlander and put to one side ready for mixing in the ingredients (the timing is crucial)

Part 3

  1. Remove from heat (I forgot that bit) Add Spaghetti to the frying pan and crack open a couple eggs and add to mixture
  2. Stir continually until the eggs are heated but not scrambled (Saturday Kitchen omlette race)
  3. Add some fresh cream where required
  4. Add 3 - 4 table spoons of grated parmesan cheese and give one final sir.
  5. Serve up with grated chedder cheese and add more Parmesan cheese to taste
  6. Test on cat first and if he likes it then you're in business
